✅ Boiling time is determined by "how many have opened," not "minutes."

📍 Dish Name: Boiled Cockles + Seasoned Cockles

⏱ Cooking time: 40 minutes (including soaking) | Difficulty: ★★☆

👥 Standard: 1 container (2-3 servings)

[Main Ingredients]

1kg of fresh cockles

[How to boil cockles]

1L of water

Cheongju or , 1 tablespoon of salt

[Seasoning for Seasoned Cockles]

4 tablespoons of brewed soy sauce

1 tablespoon of anchovy fish sauce

3 tablespoons of red pepper powder

1/2 tablespoon minced garlic

2 tablespoons of chopped green onions

1 tablespoon of chopped Cheongyang chili pepper

1 tablespoon of sesame oil

1 tablespoon of whole sesame seeds

────────────────

STEP 1. Soaking cockles to remove sand (30 minutes to 1 hour)

Cockles grow in the mud, so if you don't purge them of sand, the sand will feel gritty.

First, rub the shells together vigorously to wash off any external impurities.

Place the cockles in a bowl, pour in enough water to cover them, and add 1 tablespoon of rice wine or salt.

💡 If you put a stainless steel spoon or bowl in together, it expels foreign substances better due to the oxidation reaction. There is a real difference.

Please block the light with a lid or cloth.

It needs to be dark so that it mistakes the area for mud, allowing the sand to be removed effectively.

The time to purge cockles is about 1 hour.

⚠️ Any cockles that have opened their shells after soaking are dead. Be sure to remove them. If you boil them together, the smell will permeate the entire batch.

Discard the cloudy water, scrub vigorously to wash it again, and drain the water.

STEP 2. How to boil cockles

The key to boiling cockles is simple. Bring the water to a rolling boil, add the cockles, and immediately reduce the heat.

As soon as you add the cockles, stir in one direction for 10 to 20 seconds. And immediately Medium heatLower it to keep it calm.

If you do this, three things will be solved at once.

First, even if cooked briefly, it is definitely cooked enough to spread open.

Second, the fishy and earthy smells are neatly cleaned up.

Third, it cooks firm and bouncy without shrinking.

💡 The reason this is important is that centrifugal force causes the clam meat to gather on one side of the shell. This makes it much easier to shuck later and prevents the meat from tearing.

If you don't know this and just stir it around wildly, half the flesh will stick to one side and the other, making peeling a real chore.

⚠️ The water temperature will drop sharply once you add the cockles, so do not reduce the heat to very low. Maintaining medium-low heat is key.

STEP 3. Cockle boiling time — Visually check

You shouldn't set the boiling time for cockles to a specific number of minutes.

It varies depending on the size and quantity of the cockles and the water temperature.

The standard is this:

If 1 or 2 out of 10 open their mouths, turn off the heat immediately and take them out.

💡 Set the timer and watch from 2 minutes and 30 seconds. You catch it the moment it opens.

STEP 4. Rinse with cold water to remove heat

As soon as you take it out, rinse it in cold water to remove the heat.

You need to stop it from cooking further with residual heat to preserve its firm texture.

💡 Do not throw away the water used to boil the cockles! Use it to rinse them after shucking. If you rinse them with plain water, all the sweetness will be lost.

STEP 5. Peeling — One spoon is all you need

If you look at the back of the cockle, you can see black lines in the concave areas.

If you insert the tip of a teaspoon here and twist slightly, it opens easily using the lever principle.

Remove only one side of the skin, and gently rinse it in the boiled water you set aside earlier.

💡 This process is a bit of a hassle. It takes about 15 to 20 minutes for 1kg. But once you start peeling them, it's surprisingly addictive haha.

That is the end of the method for boiling cockles.

It's salty and delicious as is, but it's on a whole new level if you add the sauce.

The key to the seasoned cockle sauce is making it thick.

If it is too watery, the seasoning runs down, making it look and taste bad.

3 tablespoons red pepper powder, 4 tablespoons brewed soy sauce, 1 tablespoon anchovy fish sauce,

1/3 tablespoon minced garlic, 3 tablespoons green onion, 1 Cheongyang chili pepper, 1/2 red chili pepper,

1 tablespoon sesame oil, 1 tablespoon whole sesame seeds

Just put everything in and mix, and you're done. It should have a thick, creamy consistency.

💡 If the seasoning seems too watery, add 0.5 tablespoons more of red pepper powder to adjust the consistency.

STEP 7. Adding seasoning

Scoop a small amount onto a teaspoon and gently pull it out with the spoon upside down over the cockle.

If you do it this way, the seasoning adheres perfectly without lifting.

It is a hassle to upload them one by one, but

You need to go through this process for it to taste really good when you eat it.

This is the real charm of seasoned cockles haha.

🔥 One key line of this recipe:

Start at 100 degrees, keep it short, and pull it out immediately once it opens. That's all.

📌 Storage method: Boiled cockles without seasoning can be refrigerated for 2 days. Store the seasoning sauce separately and add it just before eating for the best taste.

📌 Application 1: Add 1 tablespoon of plum syrup to the sauce → Sweet and sour version

📌 Application 2: Remove the meat from the boiled cockles, place it on top of rice, and pour the sauce over it → Cockle Bibimbap complete!
