Slow-Aging Diet | How to Make Tomato Marinade to Prevent Blood Sugar Spikes (Benefits of Olive Oil)

You all know that these days, the trend is 'slow-aging diets' that keep your body young, rather than diets that involve simply starving yourself, right? I’ve found that as you get older, the 'order' in which you eat determines your condition more than 'what' you eat.

In particular, it is said that consuming vegetables and healthy fats before carbohydrates can effectively prevent "blood sugar spikes," where blood sugar levels skyrocket after a meal.

✈️ A Gift from South Africa (Special Story)

Before we get started with the main dish, let me reveal a little secret to today's flavor. Usually, you add lemon juice separately to olive oil, right? But today, I used a slightly special oil.

It is the 'Lemon Infused Olive Oil' that my older brother, who lives in South Africa, bought for me as a gift when he came to Korea!

As soon as I opened the lid, a fresh lemon scent wafted out, so the flavor was amazing even without squeezing the juice separately. (Thanks, Oppa! 🥰)

"Huh? I don't have lemon oil at home?" Don't worry! You can make it just as refreshing by adding half a fresh lemon (or 2 tablespoons of store-bought lemon juice) to regular extra virgin olive oil.

🥣 Ingredients

I reduced my sugar concerns by using allulose instead of sugar. The simpler the ingredients, the better.

🍅 Essential Ingredients: 1 pack of cherry tomatoes (500g), plenty of olive oil

🧂 Seasoning Ratio:

4 tablespoons of olive oil

1 T balsamic vinegar (for umami), or 1 T allulose (for healthy sweetness)

A pinch of salt (I use lemon salt!)

1.5 tablespoons of lemon juice

A sprinkle of pepper (white pepper is best, but black pepper is OK)

🌿 Optional ingredients: Chopped onion, basil leaves (highly recommended!)

👩‍🍳 How to Make (Recipe Step)

STEP 1. Peeling (The most important step!)

Remove the stems from the washed tomatoes, and make a very slight cross (+) cut on the bottom.

Tip: If you cut too deeply, the flesh will get crushed, so make a light graze!

STEP 2. Blanching & Ice Water Shower

Put the tomatoes in vigorously boiling water and blanch them for exactly 10 to 15 seconds.

As soon as the skin opens slightly, take it out immediately and drop it into ice water (cold water)! You need to cool it down so the skin peels off easily and the texture becomes crispy.

💡 Chef's Nutrition TMI (Tip)

Why do you have to eat it with 'oil'?

Lycopene (an antioxidant), the key component of tomatoes, is fat-soluble, so when consumed with olive oil rather than eaten plain... The absorption rate in the body is a whopping 5 times more It gets higher.

Try taking 3 to 4 tablets before a meal. The olive oil coats the stomach, slowing down the absorption of carbohydrates—this is the principle of a true slow-aging diet.

In particular, if you use fresh, low-acidity extra virgin oil like the one I used, you can enjoy not only blood vessel cleansing but also the added bonus of anti-aging effects. It is the true cheat code for a slow-aging diet that balances taste with blood sugar control.

🍽️ Finishing and Storage Methods

Place the finished tomato marinade in a sterilized airtight container and let it mature in the refrigerator for half a day before serving. The vegetable juices and oil blend together to create an addictive flavor that will make you want to spoon up every last drop of the liquid.

How about a refreshing gift for your body this evening?

Have a healthy and delicious day today!
