[Seasoning] ★Golden Ratio 3:2:1

3 tablespoons of perilla oil (3 heaping spoonfuls)

2-3 tablespoons soy sauce (dark soy sauce or brewed soy sauce)

1 tablespoon of tsuyu

1 teaspoon of allulose (Optional — Can be substituted with 1 teaspoon of sugar)

5 to 6 perilla leaves

3 tablespoons whole sesame seeds (grinding them makes them even more flavorful)

3 tablespoons of dried seaweed flakes

💡 If you don't have Tsuyu? You can substitute it with 1/2 tablespoon of tuna extract + 1/2 tablespoon of brewed soy sauce.

📍 Calorie Note: Buckwheat noodles are approximately 100kcal per 100g, which is lighter than wheat flour noodles (140kcal), and the sugar burden has been reduced by using allulose instead of sugar. This meal plan is great when you crave noodles while dieting.

STEP 1. Shred the perilla leaves (1 minute)

Overlap 5 to 6 perilla leaves, roll them up tightly, and thinly julienne them.

STEP 4. Rinse noodles (cold water, 1 minute)

The starch must be completely removed for the noodles to be firm and absorb the seasoning well. At the end, tap the sieve gently to drain as much water as possible.

💡 Key Point: This is the most important part. If any moisture remains, the sauce will become watery and the flavor will drop significantly. Press the noodles firmly with your hands to squeeze out the water.


STEP 5. Add to seasoning and mix (1 minute)

Put the drained noodles into a bowl,

(It tastes much better if you grind the sesame seeds, but I just lightly rubbed them between my palms before sprinkling them on.. haha)

📌 Areas for improvement: Since there is a generous amount of perilla oil, it might feel slightly greasy for those who only eat a small amount. In that case, try reducing the perilla oil to 2 tablespoons and adding 1/2 teaspoon of vinegar.
