You can also scrub the surface of the small radish with a scouring pad.
If you peel the radish completely before soaking it
You need to be careful because the radish can spoil quickly.

It's not as difficult as you might think, but trimming young radish is
It is a bit of a hassle.

Cut the large small radishes into quarters, and the slightly smaller ones
If you cut it in half and marinate it
It pickles quickly and is convenient to eat.

Please put water and coarse salt in a large basin and dissolve it.
Make a brine and marinate thoroughly.

Let's make the seasoning, the key ingredient of Chonggak Kimchi.
As it is an important factor in determining the taste of kimchi,
You'll need to pay attention to adjusting the quantities and ratios of the ingredients, right?
One of the secrets to bringing out the flavor of kimchi is
It definitely tastes better with fruit in it.
The refreshing, sweet, and cool taste of the fruit
I think it goes well with the spiciness of the kimchi.
So I try to include apples and pears whenever possible.
However, if you add too much and there is too much moisture...
Please be careful as the kimchi may get soggy :)
Please soak the dried chili peppers in water for about 30 minutes in advance.

Ingredients for the blender
1 onion, 4 tablespoons minced garlic
6 tablespoons anchovy fish sauce, 3 tablespoons salted shrimp
1 tablespoon minced ginger, 1 apple
1/3 of a pear, red chili pepper
4 dried chili peppers, 3 Cheongyang chili peppers
Add 3 red chili peppers and 1/2 cup of cold rice
Grind it in a blender.

Kyaaa~~~ Just looking at the sauce makes it look delicious :)
Add red pepper powder to the seasoning blended in a blender
Mix well.
If you like spicy food, use Cheongyang chili powder
You can mix and use them as well.

Now, add the seasoning to the altari radish kimchi.
Please mix well by rubbing.

So that the seasoning is thoroughly and evenly applied.
Once you mix it, the recipe for making Altari Kimchi is complete.

Please pack the Altari Kimchi firmly into the kimchi container.
In the current hot summer weather, after aging at room temperature for about a day
(It depends on the weather)
Please store in a kimchi refrigerator.
Just looking at the photos makes my mouth water again...
The sauce turned out so delicious this time :)

It is cooked so deliciously that it is never missing from the table at every meal.
Altari Kimchi makes its appearance!!!
The moment you bite into it with a 'crunch,' the fresh small radish
As the juice spreads, the umami of the seasoning is enhanced
A refreshing coolness fills my mouth.
As if blowing away the sweltering summer heat... haha
