hello.
It's our day :)
The weather has gotten a lot warmer lately, hasn't it?
It looks like spring is coming~ ❉𓂂(◕˓˳◕ )𓂂❉

Maybe that's why I'm bursting with energy today.
I tried making two kinds of kimchi... haha
Among them, making it easy even for cooking novices
I'll show you how to make delicious green onion kimchi.

Lee Young-ja's green onion kimchi featured on the show *The Manager*
Jeon Hyun-moo ate like crazy, so at one time
It was popular at one time, too.
I think I've been diligently making and eating green onion kimchi since then, too!
Because my family gives me a thumbs up every time I eat it, saying it's delicious.
It's the kimchi I make with the most confidence... haha

Made with blue crab fish sauce to add umami flavor
Scallion kimchi is truly love^^ haha
Lee Young-ja's Green Onion Kimchi Recipe
2kg of scallions
Blue crab fish sauce 200ml
100g Cheongyang red pepper powder
seasoning
1 onion, 1 piece of ginger, 1/2 pear,
200g Cheongyang red pepper powder
2 tablespoons of salted shrimp paste
5 tablespoons of plum syrup
Whole sesame seeds
Half the recipe ->
[ingredient]
900g peeled scallions
100g red pepper powder
100ml blue crab fish sauce
2/3 tablespoon of salted shrimp paste
3 tablespoons of plum syrup
1/3 of an onion
1/4 of a pear
1 teaspoon of ginger syrup

Today, I bought cleaned scallions at the supermarket.
If you have purchased scallions with soil on them, soak them in water, then
Please remove the dirt and wash it thoroughly under running water.

Please wash the scallions in clean water and cut off the tips of the leaves.
Then the seasoning will soak in evenly, making it even more delicious.
Cut off the tips of the roots.
If the white stem is thick, it is best to cut it in half lengthwise.

Actually, scallion kimchi doesn't require a salting process.
You can soak it in 10 minutes.
One of Lee Young-ja's secrets to green onion kimchi is using only the white stem parts.
The process of soaking in fish sauce for about 5 minutesThere is

Since the stems of the scallions are thick, so that the seasoning can be absorbed well
Please marinate in crab fish sauce for only about 5 minutes.
Please stand the scallions upright so that the fish sauce soaks in.
I'll make the seasoning while it's marinating.

When Lee Young-ja was making kimchi on the show *The Manager*
I seasoned it with blue crab fish sauce instead of regular anchovy fish sauce.
It started to become known for having a much deeper and more delicious flavor.
So, whenever I make green onion kimchi, I always make sure to use crab fish sauce.
I ended up adding it. I like it because it gives a much deeper and richer flavor.
It has less of a fishy smell and a clean taste.
Anyone can enjoy it without any strong preferences.

I'm going to try making the seasoning sauce for scallion kimchi.
Add 1/3 onion, 1/4 pear, salted shrimp paste, ginger, and plum extract
Along with the blue crab fish sauce that had been soaked in scallions.
You just need to put it in a blender and blend it.
I added plum syrup to make it a bit sweeter.
The seasoning sauce is not heavy or cloying, but clean and just the right amount.
It was sweet, so I kept eating it.
If you add ripe persimmons in the fall, it brings out a subtle sweetness.
It's really delicious!

If you add red pepper powder to the ground seasoning and mix well,
The green onion kimchi seasoning is complete.
Just looking at the seasoning makes my mouth water like crazy!
I predict another huge success today... haha

Now that I've prepared all the ingredients, I'll start mixing them properly.
Place in a large bowl and pour the pre-made sauce over it.
You just need to mix it gently.
Do not use all the seasoning; if you save 1-2 tablespoons
I will use it in the final stage.

If you mix it too vigorously at this stage, it will taste raw and tasteless.
You have to handle it as gently and carefully as possible.
Once the seasoning is evenly coated, sprinkle with sesame seeds to finish.

It tastes good right away, but I wanted to experience a slightly deeper flavor.
I left it at room temperature for about a day and then put it in the refrigerator.
The scallion kimchi made this way goes well with grilled pork belly.
If you eat it as a side dish or cook Chapagetti and put it on top
You know it tastes like honey, right? Haha.
It goes perfectly with warm white rice, too.
I highly recommend this as a side dish for rice!

Put the remaining 1 tablespoon of seasoning into the kimchi container.
Please lightly sprinkle it on top one more time at the end!

The crunchy texture is superb.
Spicy and salty with a unique umami flavor that is absolutely amazing..
It's really the best side dish for rice!
You too, full of spicy and tangy charm
Try making and eating scallion kimchi yourself.

Anyone will be able to easily take on the challenge.
