It has no fishy taste and is full of umami.
Even if you eat it right after making the kimchi
It's really delicious :)

This is my first time making green onion kimchi, and it's really
It turned out delicious, so I think I'll be making this often from now on.. haha
The scallions available these days are especially delicious.

The green onion kimchi made by Lee Young-ja on the TV show
Jeon Hyun-moo tasted it and ate almost half a bottle right where he was sitting.
I said my nickname for eating everything was "Pa-chinnom"... haha
I wondered if it was really that delicious.
I made and ate it this time
There’s a reason for that, you know :)
I already bought Mija's crab fish sauce.
Since it is being used for various purposes
I knew about the taste, but
It really goes well with green onion kimchi.

I bought pre-trimmed scallions, so I have to prepare them.
It's convenient because there isn't much... haha
If there is any dirt on it, soak it in water and remove the dust.
After soaking, rinse thoroughly under running water.
If the tips of the leaves are dry, please remove them.
When you lift the chives, the stems are firm
The one standing up is fresh.
Also, when making kimchi, air in the leaf parts
Gently insert the end part so it goes in.
Cut it off. That way, the seasoning will...
It's evenly infused and delicious :)

Rinse thoroughly and ensure no moisture remains.
Remove it with a kitchen towel.

Trim and cut off the tip of the root, 1-2 cm.
Cut the thick part of the stem in half.

The key point of the green onion kimchi recipe shown on *The Manager* is
It is simply marinating the scallion stems briefly in blue crab fish sauce!
Washed 60ml of blue crab fish sauce
Centered on the rhizomes of chives
Please sprinkle and let it soak for a while.
Since the white stem is thick, this part
It is good to marinate it in advance.

After tilting one side, the fish sauce
It allows it to seep into the stem.
After 5 minutes, flip it over and cook evenly
Please let the fish sauce soak in.
In the meantime, I'll try making the green onion kimchi seasoning.

Lee Young-ja's Green Onion Kimchi Seasoning Recipe
The broadcast stated it based on 2kg of scallions, but
I reduced the amount to 500g and seasoned it.

1/4 onion and 1/2 teaspoon ginger syrup
It would be nice to include pears, but as a substitute
60ml of ground pear
0.5 tablespoon salted shrimp paste, 1 tablespoon plum syrup
Even the leftover crab fish sauce after the pickled scallions
Put everything into a blender and grind it finely.
Add 60g of red pepper powder to the ground seasoning and mix.
The green onion kimchi seasoning is complete.
It's so simple and easy, right? Haha

Add the seasoning to the chive kimchi and mix well.
At this point, do not use all the seasoning, but 1-2 tablespoons
Leave it aside and save it for the final stage
Spray on the top surface.
Wow~~ just rubbing in the seasoning, and already
I have a strong feeling this is going to be delicious!

Now, put the remaining seasoning in the kimchi container
Place it on the top surface.

If you sprinkle whole sesame seeds on top to finish
It's a simple recipe, but the umami flavor really explodes.
The green onion kimchi is finished!

If you leave it at room temperature for half a day and then refrigerate it
You can enjoy it.
Being impatient, I dipped the roasted sweet potato right away
I tried eating it with green onion kimchi on top…
Words can't be put into words
It tastes a bit cleaner than when anchovy fish sauce is added.
The umami flavor is absolutely amazing :)
