Even if it's playing, when you go into the kitchen
When sweat is pouring down

I can't just not eat kimchi because it's hot...
It feels a bit empty on the table without kimchi, doesn't it?

So, the simplest yet most delicious
I would like to introduce you to how to make summer kkakdugi.
Although summer is almost over, yet
It was really hot in the middle of the day.
Kkakdugi ramen is light and easy to eat even in hot weather
It's kimchi that can be made..!
Now, shall we get started on how to make kkakdugi?
Let's start by looking at the ingredients:
How to make kkakdugi
[ingredient]
2 radishes, 3kg
For pickling radishes
1/3 cup salt
New Sugar 1.5g
[seasoning]
2 cups of red pepper powder
2 tablespoons of leftover rice
1/2 apple
1/2 pear
1/4 onion
1/3 cup minced garlic
4 tablespoons anchovy fish sauce
1.5 tablespoons of salted shrimp
7 red chili peppers
200ml of water
Salt (for seasoning)

First, you need to prepare the radish.
Summer radishes have a lot of moisture and can be a bit soft.
You have to marinate it using a special method. I'll share the secret!
Cut the radish into appropriate sizes and with salt and sugar
Please marinate for about 2 hours.
If you do this, moisture will be drawn out of the radish
It maintains a crispy texture.

The ingredients to go into the blender are apples, pears, and onions.
Cut it into appropriate sizes.

Next, it's time to make the sauce.
Leftover rice, apples and pears, minced onions and garlic, salted shrimp paste
Put red chili peppers in a blender
Grind it.

Add red pepper powder to the pickled radish
First, apply the color.

After pouring in the ground seasoning, mix thoroughly with your hands.
Please mix well.
Don't forget to season with salt at this point!

Finally, put it in a kimchi container.
After aging at room temperature for about a night
Put it in the refrigerator and it's done~~

The characteristic of summer kkakdugi is its cool and refreshing taste.
It is a feature.
Add apples and pears to add sweetness,
The umami flavor was enhanced with salted shrimp paste.
I also added cold rice to make it taste even more refreshing.

Kkakdugi is easier to make compared to other types of kimchi.
It does not require a complicated process like napa cabbage kimchi,
The ingredients are simple, too.
So, even those who find making kimchi difficult
You can easily give it a try.

The cubed radish kimchi made this way is good as a side dish for rice, and
It is also really delicious when eaten with noodles or cold noodles.
Especially when eaten with cold noodles in the summer
It feels like the heat is completely blowing away.
One thing to note is that kimchi ripens quickly in the summer.
Make only as much as you will eat and put it in the kimchi refrigerator.
Please keep this.

Finally, one more great tip!
When choosing radishes, select those that are firm and heavy.
That way, you can enjoy the crunchy texture.
Try making refreshing and delicious summer kkakdugi.
Don't lose your appetite in the hot summer, delicious
Stay healthy with kkakdugi!
