This dish, especially famous as a "rice thief,"
Once you make it, you can enjoy it for several days.

Shall we start by finding out how to make it?

How to make perilla leaf kimchi
[ingredient]
40 perilla leaves
1/4 of a small onion
1/5 of a small carrot
[Sauce]
1 tablespoon of red pepper powder
1 tablespoon of soy sauce
1 tablespoon anchovy fish sauce
1/2 tablespoon minced garlic
1/2 tablespoon of sugar
1 tablespoon of sesame salt
1 tablespoon of chopped green onion
Anchovy broth: 1 pack of broth + 80ml water

Please cut off any long stems of the perilla leaves.
At first, I didn't know either, so I cut it short.
Then it was inconvenient to pick them up one by one later.
So, it is best to cut it with some leeway.
First, please soak the perilla leaves in water for about 10 minutes.
Doing this helps remove pesticides or dust from the perilla leaves more effectively.
Afterwards, wash the perilla leaves thoroughly and drain the water using a sieve.

Dissolve one egg in hot water to make the broth for the perilla leaf seasoning.
I used it.
You can also use it as kelp broth.

Please julienne the carrots and onions.

On top of the shredded vegetables
1 tablespoon red pepper powder, 1 tablespoon soy sauce
1 tablespoon anchovy fish sauce, 1/2 tablespoon minced garlic
1/2 tablespoon sugar, 1 tablespoon sesame salt, 1 tablespoon chopped green onion
After pouring in the prepared broth
Mix everything together and the sauce is complete!

Since there wasn't much, I put the perilla leaves in a storage container one by one.
I spread the seasoning evenly over it.
If you apply too much at this stage, you might have to squeeze it out later.
Please apply only an appropriate amount.
Keep lifting them up one by one, stacking them neatly
Please apply the seasoning.

It was only 40 pages, so I finished it quickly... haha
