Abalone Innards Fried Rice Recipe
[ingredient]
150g abalone, 80g innards, 2 cups (120ml) water,
3 tablespoons mirin, 3 tablespoons soy sauce, 3 tablespoons oyster sauce,
3 eggs, 3 bowls of rice
1 tablespoon of minced garlic, a little salt and pepper,
1 tablespoon minced Cheongyang chili pepper, 1 tablespoon finely chopped green onion
Refer to Chef Shin Hyo-seop's recipe

First, I'll make the offal sauce.
In a blender, 150g cleaned abalone, 80g innards, 2 cups water, 3 tablespoons cooking wine,
Add 3 tablespoons of soy sauce and 3 tablespoons of oyster sauce and blend.

Put the ground offal in a heated pan and boil it to make the sauce.
It tastes even better if you blend it in a mixer like this.
While boiling, the fishy smell of the abalone innards is also removed, and
It is good to store and use again.

Until the sauce becomes thick and firm.
Boil it (until the moisture evaporates).
Please let the finished sauce cool down a bit.

Please slice the abalone into bite-sized pieces.
Now, I’m going to make fried rice.
Beat 3 eggs to make egg mixture.
Coat generously with oil, pour in the beaten eggs, and make scrambled eggs
Please make it first.

Add rice to this and stir-fry.
If you fry the rice first, it gets coated with oil.
Fried rice that is much more savory and fluffy
You can make it

Push the fried rice to one side, and in the empty space
Lightly coat with oil, 1.5 tablespoons of minced garlic, abalone, and a little salt
After adding chopped Cheongyang peppers and stir-frying briefly
Stir-fry with the fried rice, then add the offal sauce
Turn up the heat to high and stir-fry once more.
If you add 1 tablespoon of butter at this point, the savory flavor is enhanced, and
The flavor really comes alive!

The remaining abalone is grilled in butter and placed whole on top of the fried rice.
I uploaded them one by one... haha

After filling a bowl generously, sprinkle with chopped scallions.
It's finished!!!
How does it taste, you ask?

In a word, the umami flavor is absolutely amazing,
It's really fresh!
You can feel the chewiness and savory flavor intact.
It's fried rice.
The flavor of the offal is especially alive
It even has a deep flavor :)

Above all, to make it easy to eat
The cleaned, cooked abalone meat and innards are separate.
I made it really simply because it was included, but
The taste wasn't simple... haha

It sold out at the Lotte Department Store pop-up store.
They say it is a popular food.
Since it is a product supplied to hotels or department stores
I can buy with confidence, so I think it would be great as a gift.

Instead of freezing live abalone, cook it like this.
They say that freezing keeps the taste fresh for longer.
It was really great because there was no hassle of disposing of abalone shells!
