First, you need to prepare the lotus root.
Peel the skin with a peeler and cut it into bite-sized pieces.
It is usually good to slice it to a thickness of about 0.5 cm.

How should lotus root be stored?
It is best to store lotus roots wrapped in newspaper in the refrigerator with the soil still attached, or to peel them, boil them in water with vinegar, and then freeze them. Boiled lotus roots can be frozen in an airtight container, but you must remove the moisture beforehand to prevent them from becoming mushy when thawed later.

Put the lotus root in boiling water, and add 2 tablespoons of vinegar.
Boil for about 5 minutes.
Adding vinegar can prevent browning, and
It also removes the bitter taste.

Please finely chop the Cheongyang peppers and red peppers as well.

Rinse the boiled lotus root in cold water.
That way, you can maintain the crunchy texture.

Put the lotus root in a frying pan and drizzle with 2 tablespoons of cooking oil.
Stir-fry over medium heat for about 3 minutes.

Add 1/2 teaspoon of ginger and stir-fry together.

After pouring in the prepared 1 cup of water, when the water boils
2 tablespoons sugar, 4 tablespoons soy sauce, 2 tablespoons mirin,
Add 2 tablespoons of corn syrup and simmer over medium heat for about 10 minutes.

After adding 2 tablespoons of corn syrup for the second time,
Simmer over medium heat for about 5 more minutes.
Finally, add about 1/3 tablespoon of red pepper powder.
If you add green and red chili peppers and 1 tablespoon of sesame oil
The recipe for chewy yet crunchy braised lotus root is complete!

After placing it on a plate, please sprinkle a little sesame seeds on top.
That sweet and salty soy sauce flavor is something everyone knows, right? Haha.
However, perhaps because the texture varies depending on the cooking method
It's really chewy and delicious :)

I highly recommend this as a side dish for rice.
I'm planning to try making lotus root salad next time.
