Because burdock is cooked with the skin on
It is best to wash it thoroughly under running water.
Burdock peel is rich in nutrients.
You can easily peel it off by gently scraping it with the back of a knife.
You may use fillers.
However, if you slice it too thinly, browning occurs
Please be careful as this may happen!

You just need to slice the burdock root diagonally.
If you use a slicer, you can make it evenly thick
It is convenient because you can cut it.
Since there isn't much today, I sliced it with a knife.

If you soak the sliced burdock root in water and add 1 tablespoon of flour to dissolve it...
You can remove the bitter taste (in about 15-20 minutes).
You can prevent browning by soaking it in vinegar.

Wash the soaked burdock root strips and drain the water.

Put shredded burdock root in a frying pan and 2 tablespoons of cooking oil
Add and stir-fry over high heat (about 2-3 minutes).

5 tablespoons of dark soy sauce to shredded burdock root lightly stir-fried in cooking oil,
After adding 1 tablespoon of corn syrup and pouring in 1 cup of water,
Close the pan lid and simmer over medium heat for about 15 minutes.
After that, open the lid and continue stir-frying.
The color soaks in, and the texture becomes chewy.

Add 2 tablespoons of corn syrup and stir-fry for about 5 more minutes.

If you add sugar, it may become hard.
Be careful!!!

Finally, add 1 tablespoon of corn syrup and 1 tablespoon of perilla oil.
It adds shine.

Sprinkle with whole sesame seeds to complete the delicious braised burdock root.
