Hello~~ Fun-Staurant, the TV program we eagerly await every week! I wonder what kind of recipe Mr. Eonam Ryu Soo-young will present...
Hello~~
I look forward to it every week
TV program Pyeonseutorang!
I wonder what kind of recipe Mr. Eonam Ryu Soo-young has
With a fluttering heart again today, wondering if you will let me know
I've been waiting.

Today, as well, it did not disappoint.
You shared a magical recipe~~

Right away
More than a gourmet dish It's braised tofu!
[ingredient]
One block of tofu, 350g
1 onion
1 green onion
1 Cheongyang pepper, 1 red pepper
seasoning sauce
2 tablespoons soy sauce, 2 tablespoons oyster sauce,
1 tablespoon red pepper powder, 1/2 tablespoon minced garlic,
1/2 tablespoon sugar, 20 swirls pepper, 200ml water,
Two swirls of cooking oil
Pyeonseutorang

Wipe the main ingredient, tofu, with a kitchen towel
Wrap it and leave it for about 2-3 minutes.
Then the moisture is automatically absorbed into the kitchen towel.
The moisture needs to drain so that the seasoning penetrates deep into the tofu.
They fit right in.
Based on the experience Ryu Soo-young created after practicing numerous times
The difference between draining the water and not draining it
They say it was distinctly different.
The braised tofu tastes much better when the moisture is removed
Since you said it was good, before cooking Dehydration is essential!

Wow… amazing~~ for one recipe
Research, research!!! I give you a round of applause..^^
Next, please cut the tofu into 8 equal pieces.
It is usually cut into bite-sized pieces before cooking.
Key point of slicing!!!
This concept looks a bit cool
Since it is a recipe for making a gourmet dish
To make it look visually luxurious
You slice it into long strips.
You need to cut one block of tofu into 8 uniform pieces.
They say it's becoming more luxurious... haha
Teacher Eonam's attention to detail... !!
I used to always grill the tofu first for the braised tofu dish.
Mr. Eonam's Ryu Soo-young's recipe is
This is a recipe that does not involve grilling the tofu.

Instead, I'm going to grill green onions and onions.
Slice the onion thinly, and finely chop the green onions.

Add the chopped green onions and onions to a preheated pan
Grill it over high heat.
The key point here is to bake it without flipping it!

If you flip the vegetables over after about 3 minutes
Onions and green onions turn deliciously brown and golden brown.
It will be blackened.
(Grill it until slightly burnt to enhance the sweetness and umami!)
At this point, please drizzle two generous turns of oil.
You know it tastes best when stir-fried in plenty of oil, right? :)
Mmm... it smells delicious... haha
Teacher Eonam's recipe, cooked the exact opposite of traditional braised tofu!
Now, I'll season it.
Add 0.5 tablespoon of sugar and 0.5 tablespoon of minced garlic
Please stir-fry it one more time to mix well.

Gather the ingredients to one side of the frying pan to create some empty space.
I'm going to make the sauce now..
Please turn off the gas as it may burn if there is a flame.
I'm going to season it while it's still hot.

Do not mix 2 tablespoons of soy sauce and 2 tablespoons of oyster sauce into the vegetables.
Please put it in the empty space next to the ingredients and boil it separately.
The smoky flavor and aroma are enhanced.
Next, sprinkle 1 tablespoon of red pepper powder over the vegetables.
Because red pepper powder burns easily
I will put it in separately.

Now, with the fire turned back on high...
Once boiled soy sauce + oyster sauce and red pepper powder seasoning
Mix the ingredients and stir-fry.
At this point, stir-fry quickly over high heat for about 1 minute!
It is a cooking method similar to Chinese cuisine.
I'm going to braise the tofu in a delicious sauce :)
Chef Lee Yeon-bok says the cooking process is similar to Jjamppong.
The smoky and savory flavors are going to be insane... haha

Once well stir-fried, turn off the heat immediately and move the ingredients to one side.
Gather everything together, place the 4 pieces of cut tofu in the pan, and
After placing the stir-fried ingredients on top of the tofu,
Please place the remaining tofu on the pan.

Now, pour in a cup of water and with the heat on.
Please boil it.
Once it boils vigorously, add 20 swirls of pepper, then
Please close the pan lid.

Then, reduce the heat to low and simmer for 10 minutes.
You must simmer it over low heat for a long time so that the seasoning penetrates deep into the tofu.
It's delicious~

After 10 minutes, open the lid and boil a little longer.
When the broth has reduced to a thick consistency, turn off the heat.
Adding Cheongyang and red chili peppers makes it an exquisite dish.
The braised tofu is finished!

Originally, tofu was like a side dish on our dinner table
If it were a side menu
Created today using Ryu Soo-young's recipe
Braised tofu is a main dish
He has ascended the throne.

If you put it on white rice and mix it up to eat~~!!!
You know, right? Haha.
I made it without baking, so the tofu was incredibly moist and soft.
It melts in your mouth~~
The spicy and pungent taste of red pepper powder and Cheongyang peppers and
Caramelize the green onions and onions.
Perhaps because it was roasted, a pleasant sweetness combined
It is truly delicious even if you just mix the rice with the sauce and eat it.
You know what's really delicious? :)
oh my god!!!
