After thinking it over, I decided to have kimchi fried rice for the first time in a while.
I tried making this :)

Usually, there isn't really a recipe to speak of.
I just roughly made it with kimchi and leftover rice,
This time, using Baek Jong-won's recipe
I tried making it, and…
It's really delicious!

That special? Kimchi fried rice recipe

Serves 4
[ingredient]
2 cups of finely chopped kimchi
4 bowls of rice
1 can of 250g tuna
3 tablespoons of finely chopped green onions
3 tablespoons minced onion
[seasoning]
2 tablespoons of soy sauce
2/3 tablespoon of sugar
2/3 tablespoon of red pepper powder
60ml water
Half a tablespoon of gochujang
A little pepper
1 tablespoon of sesame oil
[topping]
Fried eggs
dried seaweed flakes
sesame salt

Finely chop the onion and green onion.

You can cut the kimchi with scissors, and
Please cut it into small pieces about 1cm in size.



After heating the pan, add the remaining oil from the canned tuna.
Add a little sesame oil and stir-fry the green onions first.
It makes green onion oil.
Then, add the onions and sauté them lightly.

Add the finely chopped kimchi and stir-fry over medium heat.
Until the kimchi becomes transparent
The key is to stir-fry it thoroughly!



Add sugar to enhance the umami flavor,
Push the stir-fried kimchi to one side of the frying pan, and
Add soy sauce to the empty space and bring it to a slight boil.
Please stir-fry it with kimchi.
Then the flavor is absolutely amazing.


Pour in the water and add the tuna.


Add red pepper powder and cold rice and stir-fry.
Keep over medium heat and mix well.
Please stir-fry it for me.


It's not in Baek Jong-won's recipe, but,
If you add 1/2 tablespoon of gochujang here,
It has that savory umami taste like the food you eat at a restaurant
They say it skyrockets... haha
For those who find spiciness overwhelming
You don't have to add it~~
It would be good to adjust it to your own taste.


Finally, drizzle with sesame oil to add a nutty aroma,
Please sprinkle some black pepper as well!

I also fry the eggs nicely.
