😊 Are you watching Netflix's *The Chef in Black and White* these days? You know how Chef Im Sung-keun was unfortunately eliminated there with his dish called 'Carrot Hell.' 😭

While watching the show, I couldn't stand the thought, "Japchae made only with carrots? I wonder if it would actually taste good?" I was so curious that I couldn't hold back.
So, I saw the recipe the chef uploaded to Imjjang TV YouTube this morning and tried following it right away!
The photo just doesn't capture all this shine. 😭 Check out the video to see just how gorgeous this carrot japchae from hell(?) is! (Warning: may cause excessive drooling 🚨)


🥕 Prepare ingredients
Main Ingredients: 1 carrot, 10g bell pepper, 20g onion, 1 shiitake mushroom, pine nuts (★Essential), 1 pack chicken breast (I used convenience store smoked chicken breast! Super convenient👍)
Seasoning: Cooking oil, salt, sesame oil, white pepper
1. Julienne the ingredients
Please julienne the carrots into long strips to give them a japchae-like texture.
Season with two pinches of salt and let it sit for a while.
Slice the bell peppers, onions, and mushrooms to similar thickness. Shred the chicken breast along the grain. (It's so convenient using convenience store chicken breast without needing to boil it lol)
2. ★Today's Key Kick!
Crushing pine nuts The key secret ingredient in Chef Im Seong-geun's recipe is this 'pine nut'.
You shouldn't just put it in; you need to place it on a kitchen towel and use a rolling pin to crush it while draining the oil.
Doing this brings out the nutty flavor tenfold. Absolutely do not skip this!

Heat a pan, add oil, and stir-fry in the order of carrots → bell peppers/mushrooms.
Afterwards, set it aside, and lightly sauté the onions separately in the same pan.
Add the shredded chicken breast and a generous amount of the crushed pine nuts from earlier. Sprinkle with white pepper, drizzle with sesame oil, and mix well to finish! (Black pepper is fine if you don't have white pepper, but I recommend white pepper for a clean taste!)

The Black and White Chef's Carrot Japchae is complete.
Judging by the appearance alone, it looks like nothing but carrots, but if you take a bite… and… 😲 The nutty flavor of pine nuts and the sweetness of carrotsIt blends together so well that it tastes just like the japchae from a really high-end Korean traditional restaurant.
The texture is crunchy, and the chewing experience is amazing.
It would be a shame to end it here, wouldn't it? 😏
Actually, what I really want to recommend is this. Making gimbap with leftover carrot japchae!! 🍙
Pickled radish? Ham? Eggs? You don't need any of that. Just pile plenty of carrot japchae on top of rice, roll it up, and you're done!
This is seriously amazing… 👍 If you like keto gimbap, I think you could reduce the amount of rice and add more carrots. I devoured two rolls in one sitting. Haha.

The chef called it 'carrot hell,' but for me, it was a delicious **'carrot heaven.' 🥕
